Welcomes New Sous-Chef from Japan
Taipan, Millennium Seoul Hilton¡¯s Chinese restaurant, is honored to welcome a new chef to its kitchen. Sous-chef Teruaki Hideshima hails from Japan but has dedicated the last 16 years of his career to cooking Chinese cuisine.
Born in Nagoya, Japan, Teruaki Hideshima was destined to be a chef. His father worked as a chef his entire life, and Hideshima¡¯s brother also works in Nagoya as a restaurant owner. After graduating from the Tsuji Academy Cooking & Confectionery Vocational School in Osaka Japan, Hideshima spent almost a decade honing his culinary skills at the Nagoya Hilton at the acclaimed Chinese restaurant, Dynasty. For the last six years, Hideshima has been working at the esteemed Karin Chinese restaurant of ANA Hotel Grand Court Nagoya.
While having a chef from Japan cooking Chinese food in Korea is an interesting combination, Millennium Seoul Hilton is most excited about sous-chef Hideshima¡¯s innovative culinary talent - in particular his signature sauces, which number at over 150. His myriad of sauces vary greatly, and he even incorporates local Korean ingredients in some of them, including fermented soybean paste, yuja (honeyed citron), and sikhye (fermented rice punch).
In celebration of Chef Hideshima¡¯s new appointment, Taipan will be showcasing a special menu full of the new chef¡¯s Hong Kong-style specialties. Diners can choose from an a la carte menu featuring delicacies such as Braised Sea Cucumber and Abalone in Dried Shrimp Sauce, Entrecote of Hanwoo and Green Asparagus with Black Pepper Sauce, and Seamed Fish and Soft Bean Curd with Char Sui.
Chef Hideshima will also offer two very special set menus. The first is a seven-course menu priced at 90,000++ per person. This menu will feature ingenious dishes like Duck Breast and Papaya Salad with Black Bean Sauce, Braised Abalone and Scallops in Coconut Curry Sauce and Steamed Fish and Soft Bean Curd with Garlic Sauce.
The eight-course extravaganza is priced at 125,000++ per person and will feature specialties such as Double Boiled Whole Shark¡¯s Fin with Pine Mushroom, Stir-fried Prawns and Vegetables in Hot Sauce, Steamed Fresh Perch and Bean Curd with Garlic Sauce, and Stir-fried Tenderloin Beef in Balsamic Sauce.
