Indian cuisine, which is as diverse as its culture, geography, and climate, is distinguished by its sophisticated use of herbs and spices. The essence of good Indian cooking revolves around the appropriate use of aromatic Indian spices and the skill of subtly blending these spices to enhance, not overwhelm, the basic flavors of the dish.
Deepavali is one of the most important festivals for Hindus, though it is now celebrated by most Indians regardless of faith. A celebration of life that marks the victory of good over evil, it is a time to strengthen family and social relationships.
